This meal is the definition of Cheap GF Vegan:
- Buy a can of black-eyed peas ($1 or less)
- Buy a bunch of collards at the store or a farmers’ market ($3 or less)
Saute together in one pan…DONE!
Use a little olive oil, garlic, and/or salt. Add sesame or hemp seeds. If it’s too plain for you (try it first—it’s a delicious, robust flavor), then feel free to add tomato sauce, vegan miso mayo, balsamic or whatever suits your tastes!!
