As I’ve said before, I’m painfully new to raw desserts, but this recipe is so amazing that a friend asked me to make it with her, we had extra frosting so I immediately made a 2nd cake, then another friend who tried that had me make a double-size cake with her three days later! That speaks for itself how good The First Mess’s recipe is.
The First Mess has much better photos, but here’s how mine turned out. TASTES SO GOOD!
Since this blog is “cheap & easy” I recommend skipping the zest (can use extra lemon juice) and using almond meal, cashew meal, or similar from Trader Joe’s so that you don’t have to grind nuts yourself! Also chop the carrots finely in a food processor rather than grating them by hand!
