Potato Pancakes


The time has passed for making latkes this year, but these are delicious all year round!

Amounts of ingredients depend on how many pancakes you want at the end. I would recommend using at least 4 potatoes, with a 4 potato to 1 small onion ratio (unless you like more of an onion flavor)

  • Wash and peel potatoes
  • Peel onion(s)
  • Chop potatoes and onions as finely as desired in a food processor
  • Mix potatoes, onions, and garlic (pepper, nutritional yeast, any desired seasonings) in a large bowl. Stir in 1-2 eggs worth of substitute, like Ener-g (potato starch) or Flaxeggs
  • Stir in some GF all-purpose flour (or any desired flour) or almond meal (or other nut meal, great for grain-free) until mixture is wet but kind of sticking together
  • Put less than 1 cm of olive oil in a pan, drop in spoonfuls of mixture to form pancakes. Fry until golden brown!

Reheat in the oven the next day and they’ll taste equally fresh!! Serve with applesauce and non-dairy sour cream!
