Chocolate Coconut Donuts!

First Donut Attempt!

I bought a donut baking pan for $5 on Amazon (can’t afford a donut maker and baking is probably the healthiest way to make donuts anyway!)

I simplified this recipe from Amy Jo.


2 tbsp chia seeds or flax seed meal soaked with 6 tbsp warm water
3/4 cup canned black beans
1/4 cup: A mix of milks/oils of your choice. I used coconut cream b/c I had it, a tbsp of olive oil, and a splash of almond milk (recommended if the batter turns out too thick). You could use melted margarine, coconut oil, etc.
2 tbsp agave, maple syrup or sweetener of your choice
1 cup gluten-free flour of your choice
1/3 cup cacao powder, unsweetened and/or a few tbsp of melted vegan chocolate

Preheat oven 350. In a small bowl, mix together chia seed meal and warm water. SCombine black beans, oil, sweetener, and chia seed mixture in a food processor. Blend until smooth. Add flour and cacao powder/chocolate. Mix together until well combined. Add a splash of milk if batter seems too thick. Bake for about 15 min, then let cool.

Frost with Duncan Hines canned frosting which is usually vegan or make your own glaze! Sprinkle with vegan sprinkles or unsweetened coconut!
