Raw Berry Cheesecake

After all this time cooking and baking GF & vegan, I’ve finally attempted the RAW CHEESECAKE.

It was basically as easy as people say!

Crust:

I pureed/chopped 1 cup almonds and 2 soaked apricots (most recipes call for dates, but pretty much any dried fruit will work if you don’t have dates laying around!). I mixed in unsweetened shredded coconut and a little agave, but that’s optional. Press crust into a pan or container.

Filling:

  • Soak 2 cups cashews overnight…drain and rinse the next day
  • I pureed 3/4 the cashews, then added blueberries. I spread that over the crust
  • The other 1/4 of the cashews pureed easily too, and to this I added raspberries for the 2-color layers
  • I did add melted coconut butter and a touch of agave to the puree, but this is optional! Coconut oil would be fine too.

Freeze for a few hours, set out for 30 min before eating, then store in the fridge!
