While Daiya is wonderful, it doesn’t quite do it for me when it comes to nachos. The thicker, Mexican-style shreds melt out to cover a whole chip! The taste was phenomenal- stretchy, melted cheese with a barely different flavor from dairy cheese! The vegan shredded cheese and sour cream are basically the same price as their dairy counterparts.
In the picture above, I used Food Should Taste Good chips (use regular corn chips to save money though), black beans, and salsa too!
I also recommend adding this creamy guac spread to your nachos, or eat plain with chips!
- 2 avocados
- 1/2 package of silken tofu (for extra protein and creaminess)
- Garlic, lemon juice, salt/pepper, etc. to taste
- Optional: onion, tomatoes
Throw it all in a food processor!
