Spaghetti squash…I have heard about you for so long and now I have finally experienced the joy!
As you can learn online, there are a million ways to cook (bake, roast, etc.) the squash, but since this is “Cheap and Easy,” I include the fastest means below:
- Cut the squash in half lengthwise (see above). This may be difficult–don’t cut off your fingers!
- Scoop the seeds/inside mush out.
- Microwave the squash halves for 8 minutes.
- Scoop it out!
You can serve like spaghetti with marinara and vegan cheese or just with vegan margarine and garlic! It’s super nutritious and low-calorie.
Also roast the seeds for about 5 minutes (until they start to darken) for more nutrition and a great snack! (I just throw them on a piece of tin foil and wrap that up.
