Organics Box – Day 3

1 lbs Beets (MA)
1 lbs Delicata Squash (Quebec)
1 bunch Kale (MA)
0.5 lbs Onions (MA or NY)
1 lbs Potatoes (MA)
1 head Romaine Lettuce (MA)

Anjou Pears (WA)
1 lbs Bananas (Ecuador or Peru)
Black Plums (CA)
Gala Apples (WA)
Kiwis (New Zealand)
Valencia Oranges (CA)

The menu yielded:

Roasted Delicata Squash: Simple! Cut the squash down the middle, scoop out the seeds, and roast away. You can microwave for a few minutes first to speed along the roasting process (even at 425 degrees, roasting can take forever for really hard vegetables). SO DELICIOUS. Plain and healthy.

The black plums were just tiny and delicious. I made another salad with beets and pear.
