Spinach with Pine Nuts & Golden Raisins

This recipe is based on a common tapas served in Spanish or Mediterranean restaurants–yet it’s so easy!

Ingredients:
Spinach
Olive oil
Pine nuts
Golden raisins (purple are fine too)
Garlic
Optional: Onion

Sauté spinach in olive oil and garlic (cook onions in the olive oil first if desired). Toast pine nuts in toaster oven or sauté them as well to cook. Once spinach is mostly wilted, add raisins and pine nuts and cook a little more. Then serve!
