Roasted tomatoes are so easy and so good! Unlike most roasted veggies, you only need to roast around 350 degrees. Cut tomatoes (any size) in halves, quarters, or slices, depending on your preferences. Lay on baking sheet, drizzle with olive oil (optional: and balsamic, garlic, salt, pepper). Takes almost a 1/2 hour, but once they’re done:

– Great side dish!
– Great instead of tomato sauce
– Great with polenta or grains
– Great with any other vegetable because their unique texture compliments other veggies!
