An interesting gluten-free treat, polenta is SO easy to make. Buy a “tube” of polenta (pictured below, quinoa infused polenta available too!) for like $2-3. Cut into slices (see picture above). Fry in olive oil (like 1 minute on each side gets the job done, but can do longer if you prefer crispy).
Optional: Stir-fry with spinach.
Serve covered in marinara sauce!
