Pumpkin Oatmeal

A year-round treat and filling breakfast!

You can make this with regular oats (microwaving w/ water is easiest) or steel-cut oatmeal (RECOMMENDED, throw it in a rice cooker and it cooks right up without any work on your part! easy)


Oatmeal (regular, quick oats, or steel-cut)

Canned pumpkin


Cinnamon (or nutmeg, pumpkin pie spice), vanilla protein powder (any works, I like this brand), flax meal (or hemp or chia), nuts, pumpkin seeds, raisins (whatever floats your boat!)

Cook oatmeal. Stir in pumpkin (and protein powder, flax, nuts). Top with cinnamon. Optional: serve with non-dairy milk.

    Soooo good! I couldn’t wait so I made it this morning. I used pumpkin butter instead because I had a jar open, and it has some of that spice in it already. I also added slivered almonds. I didn’t follow your recommended 1:1 water ratio for the rice cooker, instead using the stovetop 3:1, and it totally boiled over, so should have listened to you 🙂
