This is a SIMPLE curry recipe. So simple!
- Chop up a head of cauliflower. Lay out in a casserole pan.
- Add a can of peas (or fresh or frozen peas)
- Pour over it a jar of Mike’s Organic Curry Love sauce. “Yellow Thai Curry” used in this case.
- Bake in oven at 350 for 30 minutes or until cauliflower gets softer.
Add potatoes, tofu, mushrooms, and/or chick peas (or anything else you want!) and/or use Mike’s “Tomato Coconut Curry.”
Mike’s Organic Curry Love sauce (certified vegan and GF) is available at Whole Foods for $5.99 a jar (seems like a lot but serves 4 people!). My friend used Patak’s Korma Curry, which is not vegan but more widely available!
