The great thing about this recipe is you can add and subtract as you like. Also, teriyaki sauce is typically not gluten-free, but I recommend the delicious San-J Teriyaki Sauce (gluten-free and vegan of course!) at $3-4 for a whole bottle.
Firm or extra-firm tofu (cubed or triangles)
Mix-n-Match based on what you like and have available. To make it easy, pick 3 or 4:
Baby corn (canned is easy)
Cashews (definitely recommend including!)
Combine any and all ingredients in a large pan. Drown in the San-J Teriyaki Sauce or use a gluten-free soy sauce (San-J, Kikkoman, & La Choy all have GF versions). Bake at 350 for 30 minutes, stirring halfway through. This could also be a stir-fry but that is more difficult.
